Crockpot French Dip Sandwiches

Ingredients

  • 1 White Onion (sliced)
  • 1 pack Lipton's Dry Onion Soup Mix
  • 1 pack Au Jus Mix
  • 2 cups Low-Sodium Beef Broth
  • 4 Hoagie Rolls
  • 1 pack Sliced Provolone Cheese
  • 2-3 lbs beef chuck roast

Instructions

  • Sear the chuck roast in a hot pan for 3-4 minutes on each side & transfer to the Crockpot
  • Add sliced onions and 1/3 cup of the beef broth to the same pan the meat was in. Scrape up the little brown bits left from the meat & transfer to the Crockpot
  • Add the au jus and the onion soup packets to the Crockpot
  • Pour enough beef broth to cover the meat
  • Cover and cook on low for 6-8 hours (or on high for 3-4 hours), or until the beef can be shredded
  • Butter the inside of the hoagie roll & toast under the broiler for 2 min
  • Add beef into the buns and top with cheese. Put the sandwiches under the broiler for another 2 minutes on high (or until the cheese starts to bubble)
  • Serve with the leftover juice in the Crockpot for dipping!
