Crockpot French Dip Sandwiches

You know those meals that make you feel like you’ve got your life together even though you’ve barely lifted a finger? Yeah, that’s this one. Crockpot French Dip Sandwiches are the definition of lazy luxury. The slow cooker handles everything while you do literally anything else. And then you get to dip bread into hot beefy broth like you’re at a fancy restaurant that doesn’t mind if you’re in sweatpants.

Why I Love This Recipe

This is one of those “how is this so good for how little I did” meals. Also, leftovers. These reheat like a dream, which is ideal because future-you deserves an easy win tomorrow too. Plus, the au jus makes you feel fancy, but really it’s just the cooking liquid. Dip the sandwich in it, let it soak up all that flavor, and try not to make awkward eye contact with anyone while you moan over how good it is.

Ingredient Breakdown

Here’s what you’ll need to make the kind of sandwich people will assume you worked hard on:

  • Beef chuck roastAbout 3 lbs. Grab one with some marbling (more marbling, more flavor)
  • Beef broth: The base for your au jus. Go low-sodium if you want more control over seasoning.
  • Onion soup mix: It’s a shortcut, yes, but a glorious one.
  • French rolls or hoagie buns: Something sturdy enough to survive a dunk.
  • Provolone or Swiss cheese: pick your melty champion.

Serving Ideas

These sandwiches are the main event, so keep the sides simple. Chips, fries, or a green salad if you’re feeling virtuous. If you’re hosting, you can set up a little “sandwich bar” situation with horseradish sauce, caramelized onions, or spicy mayo (I’m loving this Hot Giardinayo right now). Everyone builds their own. Everyone’s happy.

Quick FAQ

Can I make this ahead of time? Yes. It actually tastes better the next day because the beef soaks up even more flavor.

What kind of bread works best? A crusty roll that can handle dipping without falling apart, like crusty rolls or hoagie buns.

Can I freeze it? Totally. Shred the beef, store it in a freezer bag with a little broth for up to three months.

Final Thoughts

These Crockpot French Dip Sandwiches are the definition of low effort, high reward. They’re cozy, flavorful, and make you look like you really tried. Whether you’re feeding a crowd or just want leftovers that you’ll actually be excited to eat, this one belongs in the regular rotation.
