Why I Love This Recipe

I love McDonalds. However, McDonalds does not always love me. Figuring out how to make higher protein McGriddles at home has been such a game changer. I’m not someone who believes in “cheat meals” or in labeling food as “good” or “bad”, but I do try to eat a balanced diet, so that I can consistently feel my best throughout the week. Also, you can buy all of these ingredients at Costco and make these whenever you please instead of driving through the drive-through anytime a craving hits.

Ingredient Breakdown

  • Kodiak Cakes Protein Mix: This is the magic ingredient that makes these higher in protein but still taste like the real deal.
  • Eggs: The benefit of making these at home is that you can control how runny your egg is! I prefer an over medium egg on my breakfast sandwich, you can’t get that at the restaurant.
  • Bacon or Sausage Patties: Both work great here! I usually bake the bacon or cook sausage in a skillet while the pancakes are going.
  • Maple Syrup: I recently tried Butter Country’s Buttermilk Syrup and am truly obsessed. Highly recommend.

How do you cook your eggs and pancakes in perfect little circles? I am so glad you asked! I used to use the ring of a mason jar lid, and that worked perfectly. My boyfriend got me these little silicone molds for Christmas, and they work really well too!

Can I make these in bulk and freeze? Sure thing! Wrap them individually in parchment paper and foil, then freeze for up to 3 months. Reheat in the microwave for 60-90 seconds or pop them in a toaster oven.

Do I have to use Kodiak Cakes? Absolutely not, but they make these a lot more filling and higher in protein. If you use a regular mix, just know they will be a little fluffier and sweeter.

Homemade McGriddles

Ingredients

  • 2 strips of Bacon
  • 1 egg
  • Pancake mix (I like to use Kodiak Cakes buttermilk mix)
  • 1 slice of cheese

Instructions

  • Spray 2 mason jar rings with cooking spray and place in a hot pan. Add 1/2 tbsp of butter inside each ring and allow to melt.
  • Prepare pancake batter and pour inside each mason jar ring to form a small circle pancake. Remove the rings once the pancakes are ready to flip.
  • Flip the pancakes and move to the side of the pan.
  • Respray one of the mason jar rings and place it back in the pan. Crack an egg inside the ring to form a perfect circle. Remove the ring once the egg is ready to flip. Cook on each side for 2-5 minutes or until you reach your desired egg temperature.
  • Place the egg on top of one of the pancakes. Top with cheese and protein of choice (I used bacon!)
