Crockpot Mississippi Chicken

- Slow Cooker
Ingredients
- 1 Yellow Onion
- 1 bag Baby Carrots
- 4 lbs Chicken Hindquarters
- 1 packet Au Jus
- 1 packet Ranch Seasoning
- 1 jar Pepperoncinis
- 4 tbsp Unsalted Butter
- 2 cups Low Sodium Chicken Broth
Instructions
- Brown chicken in a hot pan on both sides for 2-3 minutes each side, remove from heat and place in Crockpot
- Quarter the onion
- Add the carrots and onion on top of the chicken in the Crockpot
- Pour in chicken broth
- Add in the au jus and ranch seasoning packets
- Top each chicken hindquarter with a tablespoon of butter
- Pour in the entire jar of pepperoncinis (including the juice)
- Cook on high for 3-4 hours or on low for 6 hours
